I could care less for fruit pies. Apple=boring. Pumpkin=over it. But pecan pie? Yes, please! And the best part is that I found a mix. I do love baking, but I do love free time as well. The pecan bars mix by Krusteaz is my fav--especially if you make the chocolate pecan pie version (just throw down some chocolate chips with the pecans). In fact, one birthday I requested that Claudy make this for me instead of a cake. We eat it all year round, but it is a MUST for Thanksgiving.
I've got my pecan pie done, my Grandma Egbert's cherry cheesecake pie knocked out and my yams are baking. Rolls will come tomorrow, then over the hill and through I-15 to my parents house we'll go.
The question is...if I make a plate for Carter, will he be more likely to show up?
This will either be my last Thanksgiving without Carter, or my first. I wouldn't mind if he came--think extra turkey will bring on contractions? I would appreciate it if he waited until I could have some pie though.
Just think--this could be my last Thanksgiving without Carter for 19 years (cuz then he'll be on his mission).
Know you're welcome to come Carter! Now that I've made it to my official maternity leave at work, I am getting anxious!
But for those of you not baby pre-occupied and need just one more pie to complete their offering--go pick up this mix. Me and Claudy honestly eat on it like it's a bar, or snack. It doesn't need whip cream or ice cream. I just literally grab some with my hands as I walk by. The chewiness from the caramel type filling, the chocolate after tones, and the crunch from the pecans is so great.
PS--I know this seems like a paid advertisement for Krusteaz. I wish. I'd gladly take money from them, but alas, I'm just obsessed. :)
Whatever pie you end up making, have a wonderful Thanksgiving!

I am also crazy for pecan pie. Once, my sisters and I found a pecan tree in a park, so we decided we should pick some and make it from scratch. Somehow this led to us throwing our shoes up into the branches to knock the nuts down, and then, of course, to our shoes getting stuck up in the tree. Probably the mix would have been a better idea.
