Not only did I bake this weekend, but I EVEN did a few dishes. Getting back to my ol' self feels great. And I'm sure Claudy is relieved!
Caramel. Walnuts. White chocolatey gooey-bar goodness. This dessert has it all. While I love me some chocolate, a nice blondie dessert is always needed in the regular chocolate rotation.
I had forgotten about this nugget of gold, filed way back in the crevices of my recipe book. In fact, I even posted about it on my blog already, WAY back in 2008. I titled it "Fatty Deliciousness". Yeah, not the most appealing title. 2008 self--what were you thinking?
This was ALWAYS the dessert I got when I'd go to Applebee's (they call it Maple Butter Blondie). Growing up in lame IF--there weren't many choices for eating out, so Applebee's was a big deal. Sometimes me and my friends would go there just for dessert.
Hence my utter DELIGHT when I found a copycat recipe online that tastes JUST like it. (Sorry for no attribution, I didn't save where I got it from).
**My changes--only make half the sauce. It makes a ton! Unless you want to continue to use it for a yummy vanilla ice cream topper, or apple dipper. Also, towards the end I had to put aluminum foil over the top because it was becoming too brown--although that could be my ancient oven. Hence, why I used an Internet picture instead of taking my own (I believe this is actually from their menu).
Brownies:
•1 cup sifted flour
•1/2 teaspoon baking powder
•1/8 teaspoon baking soda
•1/8 teaspoon salt
•1/2 cup chopped walnut
•1/3 cup butter or margarine
•1 cup packed brown sugar
•1 egg, beaten
•1 tablespoon vanilla extract
•1/2 cup white chocolate chips

•1/2 cup brown sugar
•8 ounces cream cheese, softened
•1/2 teaspoon maple extract or maple flavoring
•1/2 cup maple syrup
•1/4 cup butter
•1/2 cup brown sugar
•8 ounces cream cheese, softened
•1/2 teaspoon maple extract or maple flavoring
Directions:
Brownies: Melt butter, add brown sugar, and mix well. Add egg and vanilla and mix well. Gradually combine dry ingredients. Stir in white chocolate chips. Pour into a 9-inch greased square pan and bake at 350 for 20-25 minutes.
While brownies are baking, make the sauce. Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved and remove from heat. Beat in cream cheese and maple extract until smooth. (I didn't have maple extract and it's still amazing).
